When Should You Start Timing Espresso? Pump Start vs. First Drop Explained
A common espresso recipe might look like this:

The dose and yield are relatively clear. The dose refers to the dry coffee in the basket, and the yield refers to the espresso collected in the cup.
But what exactly does “28 seconds” mean?
Does the timer start when you press the brew button?
Does it start when the pump reaches full pressure?
Or should it begin when the first drop of espresso reaches the cup?
Different baristas, cafés, machines, and scale modes may use different starting points. This can make two apparently identical recipes behave very differently.
There is no single timing convention that every espresso drinker must follow. However, it is important to understand what each method measures and to use it consistently.
The Two Most Common Timing Methods
Espresso is generally timed using one of two methods.
Method 1: Start timing when the pump starts
The timer begins as soon as the brew switch is activated or the machine begins its extraction cycle.
This method includes:

Both methods can produce useful information, but their numbers should not be compared directly.
Why the Starting Point Matters
Imagine an espresso shot with the following timeline:

The target yield is reached at 30 seconds
Measured from pump start, the extraction time is:
30 seconds
Measured from first drop, the extraction time is:
23 seconds
The physical shot is exactly the same. Only the timing convention has changed.
If one person recommends a 25-second extraction measured from pump start while another recommends 25 seconds from first drop, they are describing significantly different recipes.
This is why an espresso time target is incomplete unless the starting point is understood.
Timing From Pump Start
Starting the timer with the pump is common because it captures the entire extraction process.
Advantages
It includes pre-infusion
Water begins interacting with the coffee before espresso reaches the cup. Measuring from pump start includes this important stage.
It is easy to repeat
The user has a clear action to follow: start the machine and timer together.
Many espresso machines and automatic scale modes can detect this event or simplify the workflow.
It reflects the complete recipe
If the machine uses a long pre-infusion, the duration becomes part of the recorded shot time.
It is useful for diagnosing puck saturation
A large change in the time to first drops may indicate a change in grind size, dose, coffee freshness, pressure, or puck preparation.
Limitations
Different machines treat the beginning of extraction differently.
Some machines immediately activate a full-pressure pump. Others use:

A 30-second pump-start recipe on one machine may not resemble a 30-second recipe on another.
Timing From the First Drop

The timer measures the period during which espresso is actively entering the cup.
It can simplify comparisons between some machines
Machines may use different pre-infusion sequences. Starting at first drop removes part of that variation.
It matches visible observation
For manual brewing, the first drop is an intuitive event that the user can see.
Limitations
The first drop can be difficult to define
Does the timer begin with the first isolated drop, the first continuous stream, or the moment the scale detects an increase in weight?
Different users may make different decisions.
It excludes puck-saturation time
The coffee is already interacting with water before the first drop reaches the cup. Excluding this period means the timer does not represent the complete extraction.
Manual timing can be inconsistent
The user may react slightly earlier or later on each shot. A scale’s automatic detection threshold may also differ from visual observation.
Is One Method More Correct?
Neither method is universally correct.
The better method is the one that:

For most home espresso workflows, timing from pump start provides a more complete picture because it includes pre-infusion and time to first drops.
However, first-drop timing can also be useful when comparing the active-flow portion of shots.
The most important rule is not to switch between the two methods without recognising the difference.
Extraction Time Is a Diagnostic Tool
Espresso time should not be treated as the primary target.
The dose and yield define the brew ratio. Time describes how long the machine needed to produce that recipe.
Suppose the recipe is:

Approximately 28 seconds from pump start
You should normally stop the shot near 36 g, not simply when the timer reaches 28 seconds.
If the scale reaches 36 g in only 18 seconds, the shot flowed more quickly than expected. Possible causes include:

Puck preparation is uneven

If it takes 45 seconds, possible causes include:

Both shots have the same total time, but their flow development is different.
Shot B spent much longer saturating the puck and then produced the final beverage more quickly.

Total time alone may hide this difference.
Combining time to first drop with flow-rate information provides a more complete picture.
How Pre-Infusion Changes Espresso Timing
Pre-infusion introduces water to the coffee puck at relatively low pressure before the main extraction.
Its purpose may include:

Supporting more even extraction

Allowing the puck to expand before full pressure

Pre-infusion can last a few seconds or much longer, depending on the machine and recipe.
If two shots both finish at 30 seconds, but one uses a 3-second pre-infusion and the other uses a 12-second pre-infusion, they have not experienced the same extraction process.

Automatic Scale Timing
Many coffee scales include automatic espresso modes.
Depending on the mode, the scale may start its timer when it detects:

These modes can reduce the number of actions required during brewing, but the user should understand the trigger.
If a scale starts timing at the first detected weight increase, it will show a shorter time than a timer started with the pump.
