Espresso Pressure Explained: Why More Bar Doesn’t Mean Better Coffee

A machine advertised with a 15-bar pump can sound more powerful than one brewing at 9 bar. It is easy to assume that the bigger number means richer flavour, better crema, or more professional espresso.

But a pressure rating is not a quality score.

To understand what that number tells you, you need to distinguish the pump’s specifications from the pressure used during brewing—and then connect that information with what actually arrives in your cup.

Pump Pressure and Brewing Pressure Are Different

A pump’s advertised pressure rating does not necessarily describe the pressure applied during an espresso extraction.

For example, a machine can use a 15-bar pump while being designed to brew at around 9 bar. These specifications describe different aspects of the system, so they are not contradictory. Manufacturer specifications illustrate this distinction.

When reading a machine’s specifications, ask:

Does this number describe the pump’s capability, or the intended brewing pressure?

A higher pump rating alone does not tell you how evenly the coffee will extract, whether the temperature will remain stable, or how the finished espresso will taste.

Why 9 Bar Is Common—but Not Mandatory

Around 9 bar is a familiar starting point for espresso brewing, but it is not a universal requirement for good coffee.

The useful question is therefore not:

“How do I reach the highest pressure?”

It is:

“Which setting helps this coffee taste balanced and repeatable in my setup?”

If your espresso already tastes good at the machine’s recommended setting, there is no need to change it simply because another recipe uses a different number.

What Your Pressure Gauge Actually Measures

A pressure gauge measures pressure at a particular location in the machine.

That location matters. Water passes through the machine’s brewing circuit before travelling through the coffee puck, and pressure can drop along the way. This makes comparisons between different machines less straightforward than they appear.

Use your gauge as a reference within your own setup. Observe it during brewing, follow the manufacturer’s guidance, and avoid treating another machine’s reading as a target you must reproduce.

Pressure Cannot Describe the Whole Shot

A pressure reading therefore needs context.

Record how much dry coffee you used, how much espresso reached the cup, how long the shot took, and how it tasted. These observations give you a more useful description than the gauge reading alone.

Before Changing Pressure, Establish a Baseline

The following is a practical comparison exercise, not a universal espresso recipe.

Step 1: Start with a familiar coffee

Choose a coffee you have already brewed several times. Testing a new pressure setting and unfamiliar beans together makes the results harder to interpret.

Step 2: Keep the dose consistent

Use a dose appropriate for your basket. For example, if 18 grams already works well in your setup, keep that dose unchanged during the initial comparison.

Step 3: Choose a target beverage weight

Use your existing recipe as the reference. An 18-gram dose producing 36 grams of espresso is one possible baseline—not a rule every coffee must follow.

Step 4: Record the complete result

Note the pressure reading during brewing, final beverage weight, shot time, and your tasting observations. Use the same timer-start convention each time.

Step 5: Compare repeated shots

One enjoyable shot is encouraging, but repeatability matters. Try to reproduce the result before deciding that a pressure change has improved your recipe.

Step 6: Adjust only through approved controls

Only experiment within the manufacturer’s permitted range and instructions. If pressure adjustment requires servicing or opening the machine, consult a qualified technician rather than attempting an unfamiliar modification.

If you later change grind size to refine the new recipe, record that separately. You are then comparing complete recipes, rather than isolating pressure alone.

Where a Coffee Scale Helps

A coffee scale does not measure brew pressure. It measures the beverage accumulating in the cup.

Pressure Is a Variable, Not a Verdict

A bigger bar number does not automatically mean better espresso, and a lower number does not automatically mean a weaker result.

Understand what your machine’s specifications describe. Learn what its gauge measures. Then compare recipes using consistent measurements and careful tasting.
