What Is Espresso Pre-Infusion—and Why Does It Matter?

Espresso extraction does not always begin with full pressure.

Many espresso machines first introduce a small amount of water at low pressure before increasing to normal brewing pressure. This initial stage is known as pre-infusion.

It may last only a few seconds, but it can significantly affect how evenly water passes through the coffee puck—and ultimately how the espresso tastes.

Understanding pre-infusion can help you diagnose uneven extraction, improve consistency, and make more deliberate adjustments to your espresso workflow.

What Is Pre-Infusion?

Pre-infusion is the process of gently wetting the coffee puck before applying full brewing pressure.

When dry coffee first comes into contact with water, the grounds absorb moisture and begin to expand. Introducing water gradually gives the puck time to become evenly saturated before the main extraction begins.

The basic sequence is:

  1. Water enters the coffee puck at low pressure or low flow.

  2. The coffee absorbs water and begins to swell.

  3. The espresso machine increases pressure.

  4. The main extraction begins.

Depending on the machine, pre-infusion may be automatic, programmable, manually controlled, or unavailable.

Why Pre-Infusion Can Improve Espresso

The main purpose of pre-infusion is to encourage more even extraction.

A dry coffee puck contains small differences in density. Some areas may be more tightly compressed, while others may offer less resistance.

If full pressure is applied immediately, water can find the easiest route through the puck. This may create channels—paths where water flows much faster than it does through the rest of the coffee.

The result can be an uneven shot containing both:

  • Under-extracted flavours from areas receiving too little water

  • Over-extracted flavours from areas receiving too much water

Pre-infusion helps reduce this sudden pressure shock. By allowing the puck to saturate and settle first, water may move through the coffee more evenly once full pressure is applied.

Pre-Infusion Time Is Not the Same as Shot Time

This is where espresso timing can become confusing.

Some baristas begin timing as soon as the pump starts. Others start when the first drop reaches the cup. If a machine uses a long pre-infusion, those two measurements can produce very different numbers.

For example:

  • Pump starts at 0 seconds

  • Pre-infusion lasts 7 seconds

  • First drops appear at 9 seconds

  • Target yield is reached at 32 seconds

This shot could be described as:

  • A 32-second shot when timed from pump start

  • A 23-second shot when timed from first drop

Neither number is automatically wrong. However, they represent different parts of the brewing process.

For meaningful comparisons, always record timing from the same starting point.
